Ingredients:
– 4 boneless, skinless chicken thighs
– 1 cup long-grain white rice
– 1 1/2 cups chicken broth
– 1 cup BBQ sauce (your choice of flavor)
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1/2 teaspoon black pepper
– 1 cup frozen corn (optional)
– Fresh parsley, chopped (for garnish)
Instructions:
1. In a large pot or Dutch oven, heat a drizzle of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
2. Stir in the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
3. Add the chicken thighs to the pot, browning them on both sides for about 5 minutes.
4. Pour in the BBQ sauce and chicken broth, stirring to combine. Bring the mixture to a simmer.
5. Add the rice and frozen corn (if using), making sure the rice is submerged in the liquid.
6. Cover the pot with a lid and reduce the heat to low. Let it simmer for 20-25 minutes, or until the rice is tender and the chicken is fully cooked.
7. Remove from heat and let it sit, covered, for another 5 minutes to allow the flavors to meld.
8. Fluff the rice with a fork and serve, garnished with fresh parsley. Enjoy your easy, minimal cleanup meal!
